Easy, quick and delicious. Have made this numerous times for brunch and for breakfast. Have yet to find someone who does not ask for this recipe.

- 1. Beat eggs with melted butter, milk and bisquick. cook Southwest veggies in microwave until tender, but not over cooked. Drain veggies and add to egg mixture. Being careful to temper the eggs with a small amount of the cooked veggies first. Stir in 1/2 of the cheddar cheese. Save the rest to sprinkle on top of the pie before baking. Pour mixture in defrosted pie shell. Bake at 325 to 350 degrees about 35 to 45 minutes. Temperature and time may very per oven. It's done baking, when a knife inserted in the middle of the pie, comes out clean. This may be served hot or at room temp.
