Southwest Meatloaf image

This meatloaf is a delicious twist on a classic dish. Preparation is especially easy if you have a stand mixer--just put all the ingredients in the mixing bowl and blend. Be sure to serve with guacamole!

Number Of Ingredients 10

2 pound(s) ground beef
1 - egg
2 cup(s) grated cheddar cheese or mexican cheese blend, divided
1 can(s) ro-tel tomatoes
1 cup(s) onion, finely chopped
1 1/2 cup(s) crushed corn tortilla chips
1 tablespoon(s) chili powder
1/2 teaspoon(s) garlic powder
2 teaspoon(s) cumin
1/2 teaspoon(s) paprika, heaping

Steps:

  • Preheat oven to 350.
  • Place the egg, 1 cup of cheese, chili powder, garlic powder, cumin, and paprika in a large bowl and blend.
  • Combine the rest of the ingredients and blend well.
  • Place in a 9x9 baking dish. Bake for 45 minutes.
  • Cover the meatloaf with the remaining 1 cup of grated cheese. Bake meatloaf for another 15 minutes or until internal temperature reaches 160 degrees.
