SouthWest Chicken image

This is also a recipe I have previously used from a cookbook, and I love spicy food! I usually kick it up with extra chili powder or fresh diced jalapenos.

MARINADE:
1/4 c fresh lime juice
1/4 c apple juice
1/4 c vegetable oil
2 clove garlic, pressed
2 tsp chili powder
1 CHICKEN-CUT UP

Steps:

  • 1. Mix up all of the ingredients for the marinade and then set the chicken in it and let refrigerate overnight, or about 6-8 hours.
  • 2. When ready to cook, preheat the grill for about 15 minutes. While the grill is getting hot, take the chicken out of the marinade.
  • 3. Take the extra marinade and heat it up in a sauce pan until boiling. Once this is done, shut off one of the burners on the grill and keep the rest on about medium.
  • 4. Place the chicken over the burner that is not running, rotating and flipping every 15 minutes. Baste with the extra marinade that you previously boiled.
