Southern Tomato Gravy for Chicken or Chops,Iris's image

Years ago I cooked for an elderly gentleman that consistently asked for pork chops with tomato gravy. I had no idea what heck Tomato gravy was I just made gravy and added tomato paste. He was too sweet too tell me I didn't have it right. Thank God for my Tee Irma out of Fayetteville, N.C. here is a passed down version that's sure to please.

Number Of Ingredients 14

3 tablespoon(s) bacon drippings
1 - lemon,sliced
2 medium onions, thinly sliced
1 small green bell peppers, sliced into rings
1 small red bell pepper, sliced into rings
4 large red tomatos, seeded, peeled, and coarse chopped
1 cup(s) water
2 tablespoon(s) distilled white vinegar
pinch(es) clove, ground
pinch(es) cinnamon
pinch(es) allspice, ground
can(s) celery seed
pinch(es) cayenne pepper
- salt and fresh ground pepper to taste

Steps:

  • In a heavy skillet brown chicken or chops in bacon drippings. Add the lemon, onion, and bell pepper slices and continue to sauté. In a small bowl, mix the tomatoes, water, vinegar, spices, sugar, salt and pepper until they become a thick sauce and pour over your meat. Cover your skillet and simmer over medium heat for 45 minutes or until meat is tender a nd tomato mixture has formed a thick gravylike sauce. Serve with your choice of sides.
