SOUR CREAM PORK CHOPS WITH VIDALIA ONIONS image

I DON'T REMEMBER WHERE I FOUND THIS RECIPE, BUT IT SOUNDED SOOOO GOOD.

4 1 1/2 - 2 " thick boneless chops
salt & pepper
2 Tbsp vegt. oil
1 1/2-2 c vadalia onion--separate into rings
1 c beef stock
1 Tbsp chopped fresh parsley
1 tsp yellow mustard
1 tsp paprika
1 (8 oz) sour cream
hot cooked rice (optional)

Steps:

  • 1. IN LARGE SKILLET, HEAT OIL OVER MED. HIGH HEAT. ADD CHOPS, COOK UNTIL BROWN ON BOTH SIDES. PUT ONION RINGS EVENLY OVER CHOPS.
  • 2. IN SMALL BOWL, COMBINE STOCK, PARSLEY, MUSTARD, & PAPRIKA & SEASON WITH SALT & PEPPER. POUR BROTH MIXTURE OVER CHOPS. RETURN THE MIXTURE TO A BOIL. REDUCE HEAT TO MED. HIGH & SIMMER 30 MINS, STIRRING OCCASIONALLY.
  • 3. STIR IN SOUR CREAM UNTIL BLENDED & COOK UNTIL HEATED THROUGH. THIS CAN BE SERVED OVER HOT COOKED RICE IF DESIRED
