Sour Cream Coconut Cake image

My aunt used to make this cake and still does on special nights when her nephews need comfort food. I am including the recipe card image, showing her original handwriting.

Number Of Ingredients 5

10 oz fresh or frozen coconut
12 oz sour cream
1-1/4 c sugar (can use granulated or confectioner's)
1 tsp vanilla flavoring
1 box duncan hines yellow cake mix

Steps:

  • 1. Mix together the coconut, sour cream, sugar and vanilla. Chill overnight.
  • 2. Bake cake per box directions, using 2 layer pans.
  • 3. Spread frosting on layers, top and sides of cake. Cover and chill for at least 5 days before cutting.
