Sour Cream Avocado Pie image

not at all a dessert pie; it isn't sweet; it contains avocado, sour cream, and a crust; makes a good side dish, especially with Mexican food!!

Number Of Ingredients 10

2 avocados, ripe
2 egg yolks
1 can(s) evaporated milk
4 Tbsp lemon juice
1/2 tsp salt
1 tsp vanilla
1 9" pre-baked pie shell
1 c sour cream
3 Tbsp sugar
1 Tbsp lemon juice

Steps:

  • 1. Preheat oven to 325. Scoop avocado from shells, chop and mash (or put chunks into blender, blend until smooth).
  • 2. Beat egg yolks until thickened. Add: avocado, milk, 4 Tbsp lemon juice, salt and vanilla. Beat until smooth.
  • 3. Pour into pie shell, bake for 20 minutes.
  • 4. Cool pie for 30 minutes. Combine sour cream, sugar, and remaining 1 Tbsp lemon juice. Spread over pie. Bake 10 more minutes.
  • 5. Chill before serving.
