SOPA DE AJO (DAISY) image

Number Of Ingredients 10

1/4 c olive oil
2 links chorizo, cut in half lengthwise, then in 1/4 in chunks
12 cloves garlic, sliced
6 slices 1/2 in thick italian bread
6 c chicken broth
1 bay leaf
Kosher salt
1 - 2 t white vinegar
6 eggs
pepper to taste.

Steps:

  • Cook chorizo in oil, scoop into a bowl with a slotted spoon. Stir garlic into oil & cook over low heat until soft. Remove garlic. Lay bread slices in oil and cook on each side until golden brown. Return garlic & chorizo to pot, add chicken broth & bay leaf. Bring to a boil, reduce heat & simmer. Poach eggs separately in salted vinegar water. To serve: Put bread in bottom of bowl, egg on bread, pour soup over top.
