Sole in Herbed Butter image

Just a few minutes of sauteing is all that's needed to cook this fish to perfection. If you have fresh dill on hand, mince 1 tablespoon and substitute it for the dill weed. Sole is another fish that we eat in our household. Along with catfish, whitefish, roughy, and salmon.

1/4 c butter or margarine, softened
1 tsp dill weed
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp white pepper
2 lb sole or flounder fillets
fresh dill and lemon wedges, optional

Steps:

  • 1. In a bowl, combine butter, dill, onion powder, garlic powder, salt and pepper. Transfer to a skillet; heat on medium until melted.
  • 2. Add the fish and saute for several minutes on each side or until it flakes easily with a fork. Garnish with dill and lemon if desired.
