Steps:
- Preheat oven to 350 degrees. Place coconut and salt on a shallow baking pan and mix. Spread evenly and toast in oven, stirring often, until golden, about 8-10 minutes.Let cool, then crush with your hands until crumbly.
- Pour 2 Tb lime juice in a shallow dish, place coconut in another. Dip the rims of two cocktail glasses in lime juice, then in coconut, coating well.
- Combine remaining ingredients in a blender. Puree until smooth. Divide among prepared glasses and serve!
