Smothered Pork Chops image

I made this recipe because I often can or freeze extra pork broth which surprisingly I often have in the house. So I'm always looking for ways to use it. This is a delicious pork chop and goes great with cooked white rice, egg noodles or mashed potatoes!

Number Of Ingredients 9

2 Tbsp canola oil
6-8 1/4-1/2" boneless pork loin chops trimmed of fat if desired
1/2 + 1/4 c flour, separated
2 Tbsp butter
1 medium onion, sliced into rings
1 pkg (8 oz.) fresh mushrooms, cleaned and sliced
2 c pork broth (i save and freeze or can our pork broth) if you don't have pork broth, use 2 cups chicken broth.
salt & pepper to taste
fresh shopped parsley

Steps:

  • 1. Heat canola oil in pan over medium high heat.
  • 2. sift 2/3 cup flour with salt & pepper to taste. Dredge pork chops in flour and brown in hot oil.
  • 3. When chops are nicely browned, remove them to a rack to drain; set aside, keep warm.
  • 4. Add butter to pan and saute mushrooms and onions until softened.
  • 5. Sprinkle 1/3 cup leftover flour over mushrooms and onions and stir until smooth and incorporated.
  • 6. Add pork broth or chicken broth and stir until smooth and beginning to thicken.
  • 7. Return pork chops to pan and simmer covered for 25 minutes.
  • 8. Add more salt & pepper to taste if needed.
  • 9. Garnish with fresh, chopped parsley!
  • 10. Serve with white rice, noodles or mashed potatoes.
