- In a saucepan, whisk together the cream, half-and-half, granulated sugar, and vanilla seeds or vanilla extract. Heat over medium heat, stirring, until it begins to boil. Whisk about 1 cup of the hot mixture into the egg yolks, then return yolk mixture to the saucepan, stirring constantly. Continue cooking, stirring, until it is almost boiling. Strain through a sieve to remove any lumps, if necessary.
- Chill thoroughly and freeze according to your ice cream maker's instructions.
- Makes 1 pint.
