I received this recipe from a good friend in the great big state of Texas, after I had posted it on my site, another friend made and was most impressed, a few weeks later I prepared, and I must say, this is delicious. Now what is Cuban Pork, I have no idea, I've never been to Cuba, but as far as pork with a good flavor, this is...

Time 8h15m

Number Of Ingredients 12

2 Tbsp olive oil
1/2 c orange juice
1/2 c lime juice
1 1/2 tsp salt
1 tsp ground cumin
1 tsp dried oregano
1/4 tsp red pepper flakes
1/8 tsp black pepper
7 clove garlic, smashed and minced
1 onion, sliced thin
1 bay leaf
1 1/2 kg pork shoulder, (3 lbs)

Steps:

  • 1. In a medium bowl, whisk together the oil, juices, salt, cumin, oregano, red pepper flakes, pepper, and garlic.
  • 2. Make slits in the pork with a knife and place the pork in the juice mixture and rub liberally all over with the oil mixture.
  • 3. Place pork in the slow cooker, along with the onion and bay leaf. Pour the remaining juices from the bowl over the pork.
  • 4. Cover and cook on low for 8 hours. Transfer pork to a cutting board and let cool slightly. Using two forks, shred into thick chunks. OR just shred it in the pot then use a large slotted spoon to scoop it out (this is the method I did in this photo, works great).
  • 5. Serve with cilantro lime rice and black beans, mashed potatoes, or in a sandwich with some of the juice spooned over the top, or in a tortilla with Cheddar cheese, etc.
