Slow-Cooker Cajun Dirty Rice image

A common mistake in cooking rice from scratch is to add too much liquid, which can make it gummy. There's not a lot of liquid in this recipe to start with, but the tomatoes and vegetables produce just enough to steam the rice. Serve this with a hot pone of cornbread for a quick delicious meal.

Number Of Ingredients 8

1 pound(s) ground beef
1 pound(s) ground pork sausage
2 teaspoon(s) cajun seasoning
2 - (8-oz) containers refrigerated prechopped clelery, onion, and bell pepper mix
2 cup(s) uncooked minute rice
1/4 teaspoon(s) ground red pepper
1 can(s) (10-oz) diced tomatoes with green chiles, undrained
1 cup(s) chicken broth

Steps:

  • Brown first 3 ingredients in a large skillet over medium-high heat, stirring often, for 8 minutes or until meat crumbles and is no longer pink. Transfer meat mixture to a 5 quart slow cooker, using a slotted spoon.
  • Stir in celery mix and remaining ingredients. Cover and cook on LOW for 2 hours or until liquid is absorbed and rice is tender.
