8 skewers for serving
8 2-ounce pieces of pork loin, pounded thin by the butcher or you.
Salt and freshly ground black pepper
¼ cup butter (1/2 stick) cut into 8 pieces
¼ cup chopped parsley
2 Tablespoon capers
¼ cup grated Parmigianon - Reggiano or Parmesan Cheese
4 Tablespoons extra virgin olive oil
1 lemon cut into 4 wedges

Steps:

  • 1. Put skewers in cold water to said 2. Place the pork pieces on a clean work surface and liberally season each piece with salt and pepper.
