2 cups water
2 cups whole milk
1/4 teaspoon salt
1 cup grits or coarse-ground cornmeal
4 tablespoons unsalted butter
pinch black pepper

Steps:

  • Combine the water, milk, and salt in a large sauce pot. Bring to a boil.
  • Once the liquid has come to a boil, slowly whisk in the grits or cornmeal.
  • Reduce to a simmer and cook for 20 to 25 minutes, whisking frequently. Make sure to whisk thoroughly and break up any lumps that may form.
