SHRIMP WITH CILANTRO SAUCE image

CILANTRO SAUCE
1/3 cup mild sweet chili sauce
3 tablespoons chopped fresh cilantro
2 tablespoons reduced-sodium soy sauce
1 tablespoon rice or white vinegar
1 teaspoon sesame oil, optional
SHRIMP
1/2 teaspoon salt
1 clove garlic, peeled, pressed
1 tablespoon brown sugar
2 tablespoons lemon juice
1 tablespoon mild sweet chili sauce
1 pound large shrimp (21 to 25 count), peeled, deveined, tails on
2 tablespoons canola oil

Steps:

  • In a small bowl, combine all the cilantro sauce ingredients. Taste and adjust seasoning as necessary. The sauce should be sweet with a hint of spice. Cover and refrigerate until ready to serve. To prepare the shrimp, use a large bowl and whisk together the salt, garlic, brown sugar, lemon juice and chili sauce. Add the shrimp and set aside for 15 minutes. In a large skillet, heat 2 tablespoons of canola oil over medium-high heat. Add the shrimp and cook, stirring, until the shrimp is opaque and cooked through, about 6 minutes.
