Shrimp Pad Thai image

I had to educate myself quickly to please my kids' different tastes. This Shrimp Pad Thai is one of my daughter's frequent requests when she visits from college. So little ingredients, so simple to make, and so delicious!

1 pkg rice noodles
1 lb uncooked shrimp, peeled & deveined
1 jar(s) pad thai sauce
1 bunch scallions
1 small pkg crushed peanuts
1 egg
1 bunch bean sprouts, fresh

Steps:

  • 1. Place the rice noodles in a huge bowl of hot water, for about 10 mins.
  • 2. in a wok, hot oil, scallions for a min, add the soften noodles
  • 3. mix in the jar of Pad Thai sauce, add the sprouts..microwave 2 eggs scrambled about 2 mins, mix in, if you like add a bit of water, depending on your sauce taste.....stir in the shrimp, cover on low till shrimp turn pink, garnish with crushed peanuts
