Shrimp Creole Soup image

Number Of Ingredients 8

1 (10 1/2-ounce) can chicken broth double-strength
1 (8-ounce) can stewed tomatoes cut up and juice reserved
1/4 cup celery coarsely chopped
2 tablespoons long grain rice uncooked
1/2 bay leaf
1/2 cup okra 3/4-inch thick sliced
1 (4 1/4-ounce) can shrimp medium, rinsed and well drained
dash black pepper of (optional)

Steps:

  • In a 2-quart saucepan, place chicken broth, stewed tomatoes with juice, celery, rice, and bay leaf. Bring to a boil over medium-high heat reduce heat to low, cover, and simmer 20 to 25 minutes or until rice is done and celery is tender. Remove bay leaf.Add okra to soup. Cook 3 to 5 minutes or until done. Add shrimp. Taste soup and sprinkle with pepper if desired. Bring just to a boil and serve.
