SHRIMP & CRAB IMPERIAL image

Number Of Ingredients 12

1 (roasted) sweet Red Pepper
4 tbsp butter
1/3 cup finely chopped onion
1/3 cup finely chopped celery
1/3 cup finely chopped sweet green pepper
3 tbsp flour
1 cup milk
1/2 cup heavy cream
tabasco to taste
1/4 cup dry sherry
1/8 tsp nutmeg
1 1/2 lbs divided between shrimp and crab

Steps:

  • Roast the pepper, de-seed and cut into cubes and set aside. Melt 2 tbsp of butter. Add onion, celery, green and red pepper. Cover and cook for 5 mins. Set aside. Melt remaining butter in another saucepan and whisk in the flour. Add milk. Thicken. Add cream, salt, pepper, tabasco, wine and nutmeg. Add the shrimp/crab to the vegetable mixture and cook briefly. (Add the crab after shrimp has changed color) Add the cream sauce and stir to blend. Serve.
