Shrimp Appetizers image

These are equally good served hot or at room temperature. Arrange in a shallow dish with toothpicks. Prep time does not include marinate time.

Number Of Ingredients 5

1 lb jumbo shrimp, peeled and deveined
1/2 cup chopped fresh parsley or 1/2 cup cilantro
1/4 cup olive oil
2 tablespoons finely grated fresh lemon rind
3 cloves garlic, minced (or more)

Steps:

  • Toss everything together in a bowl and marinate up to 4 hours in fridge.
  • Heat skillet over high heat.
  • Add half the shrimp.
  • Cook turning once about 2 minutes or until shrimp are pink.
  • Repeat with other half.
  • Serve either hot or cold.
