SHRIMP AND CORN SALAD image

2 cups fresh corn kernels (3 ears)
1 pint cherry tomatoes
1 lb. peeled shrimp
6 scallions
1/4 cup orange juice
2 tbls fresh lime juice
2 tsp honey
1 tsp ground cumin
1 tbls olive oil
3/4 tsp kosher salt
1/4 tsp pepper

Steps:

  • In a large bowl, combine the corn tomatoes, shrimp, and scallions. In a separate bowl, whisk together the dressing ingredients. Toss with shrimp mixture
