Shrimp and Broccoli Rotini image

Number Of Ingredients 10

6 cups water
8 ounces uncooked rotini pasta
3 cups packaged fresh broccoli florets
2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
2 teaspoons grated lemon rind
2.5 tablespoons unsalted butter
2 tablespoons fresh lemon juice
5/8 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Bring 6 cups water to boil in large saucepan. Add pasta; cook according to package directions, omitting salt and fat. Add broccoli during last 3 mins of cooking; drain.
  • Heat oil in a large skillet over high. Add shrimp to pan; saute 2 mins. Stir in rind; cook 1 min. Add pasta mixture, butter, lemon juice, and salt to pan; toss to coat. Sprinkle with pepper. Serve immediately.
