Essentially these are Anzac biscuits that we bake on Anzac Day but these cookies are requested constantly so have become a firm favourite in our household. They are so easy to make and keep well. Enjoy

Steps:
- Preheat oven to 180°C.
- Mix the oats, flour, coconut & sugar in a large mixing bowl.
- In a saucepan over low heat met the butter, honey & water. When butter mixture is melted take of the heat.
- Quickly mix in the bicarb to butter mixture. Be careful the mixture will froth up and expand.
- Working quickly add the butter mix to the dry ingredients and mix well.
- Place rounded spoons of the mix on baking trays allowing space for the cookies to expand.
- Bake for 10-12 minutes. Transfer to racks to cool.
