Sherry's easy, moist chocolate-banana bread image

I had so many over ripe bananas that I 1 day got bored & made several different recipes for banana bread, this is hubby's favorite.

Number Of Ingredients 12

3 large or 4 medium very ripe bananas
3/4 cup(s) brown sugar, lightly packed
pinch(es) sea salt
2 large room temp beaten eggs
1 teaspoon(s) real vanilla
1-1/4 cup(s) flour
1/4 cup(s) baking cocoa powder, i used hershy's
1 teaspoon(s) baking soda
1/3 cup(s) melted unsalted butter
1 teaspoon(s) cinnamon
1 dash(es) allspice
1/3 cup(s) dark chocolate chips

Steps:

  • Heat oven to 350. Spray a 9" x 5" loaf pan w/ vegetable oil cooking spray. Place 1 of the oven racks in the center of the oven, ( before pre-heating, lol.)
  • Using a blender,1st peel ,( from the bottom of the banana,) each banana & put into blender. Puree until smooth, ( it took me about 2 mins to do this.) Place pureed bananas into a large bowl. Stir in melted butter, Light brown sugar & salt. Whisk in beaten eggs & vanilla.
  • Do not use a mixer for this recipe, use a good whisk or it will not come out so moist. In another large bowl, whisk together flour, baking cocoa, baking soda, cinnamon& allspice. Scrape the banana mix into the dry flour mix. Whisk until just combined. Stir in dark chocolate chips. Gently spoon batter into pan & even out w/ a spatula. Bake 1 hr but check for doneness at 50 mins. To test, gently press the center of bread w/ a clean finger. If it feels firm & bounces back when u release the finger, it's done. Let cool on a cooling rack for at least 10 mins.
