This shallot flavored butter goes great on broiled or grilled fish and meats or on omelets. The recipe originally came from one of my mother's recipe files.

Steps:
- 1. Combine shallots and wine in a saucepan and simmer until wine is reduced to 1/4 cup.
- 2. Cream butter with a fork in a bowl. Gradually stir in shallot wine, parsley, and salt and white pepper to taste.
