SESAME FRIED RICE image

Number Of Ingredients 9

1 T sesame oil
1 t crushed garlic
3/4 t freshly grated ginger root, or 1/4 t dried ginger
2 C finely chopped fresh broccoli
1 C coarsely chopped fresh mushrooms
1/2 C finely chopped carrots
2 T vegetable or chicken broth
3 C cooked brown rice
2 T reduced-sodium soy sauce

Steps:

  • 1. Pour the oil in a L nonstick skillet, and preheat over medium-high heat. Add the garlic and ginger and stir-fry for a few seconds or just until the garlic begins to turn color and sells fragrant. Add the broccoli, mushrooms, carrots, and broth to the skillet. Cover and cook, stirring frequently, for about 3 minutes or until the vegetables are crisp tender. Add a little more broth if the skillet becomes too dry. 2. Reduce the heat to medium and add the rice, and soy sauce. Cook and stir for a minute or two, or until the mixture is heated through.
