SEARED FILLET OF BEEF WITH RED WINE SAUCE image

Top Sirloin steak
SAUCE:
1 Tbsp unsalted butter
1 Tbsp finely chopped garlic
1 1/2 cups red wine
1 Tbsp balsamic vinegar
1 tsp Dijon mustard
1 tsp Worcestershire sauce
2 cups beef stock
3 Tbsp cognac or brandy
2 Tbsp cream
Sea salt and freshly ground pepper

Steps:

  • SAUCE: sautee the garlic in the butter. When it begins to sizzle, add all other ingredients except for the cream. Reduce liquid by at least half. Add the cream and seasonings at the end. BEEF: Season the steaks with salt and a little pepper. Heat a sautee pan until very hot, and sear the meat to seal in the juices. Cook until desired doneness. Let rest for a few minutes before slicing and serving.
