Seafood Salad with crab and lobster image

If you're looking for a light dish to serve at a party, this is a good one. This would also be great at a summer garden party. 3/4 c orange juice concentrate
1/4 c white wine vinegar
1 Tbsp mayonnaise
1/4 c olive oil
1 sprig(s) fresh thyme
1 sprig(s) fresh rosemary
1 c lobster
227 g small shrimp
12 oz lump crabmeat
1 large grapefruit
1 mango
1 avocado
1/2 fresh pineapple
2 tomatoes
18 lettuce leaves
1 lime
salt and pepper to taste

Steps:

  • 1. Chop the fresh herbs very finely.
  • 2. Mix the orange juice, olive oil, vinegar, water, herbs and salt and pepper together. Refrigerate until ready to use.
  • 3. Remove the lobster, shrimp, and crab from the shell.
  • 4. Roughly chop the crab meat and lobster.
  • 5. Dice the grapefruit, mango, avocado, pineapples, and tomato.
  • 6. Add the dressing and toss until the ingredients are coated.
  • 7. Plate and garnish with a few lettuce leaves and lime wedges.
