SCRAMBLED EGGS WITH SALSA image

Yield 2 large servings

Number Of Ingredients 5

1 medium baking potato, peeded and chopped
1 Tbsp. butter
3 eggs
1 cup salsa
1/2 cup cubed or shredded cheese

Steps:

  • In medium skillet heat butter over medium heat. Add potatoes and saute until tender-firm. Beat eggs with a few Tbsp. water. Pour over potatoes. Cook until eggs are done stirring occasionally. Stir in salsa and heat through. Reduce heat to low and stir in cheese. Stir occasionally until cheese is melted.
