SCRAMBLED EGGS WITH FRESH MORELS AND SHRIMP image

8 large eggs
1 Tbsp chopped fresh chives
1 Tbsp chopped fresh basil
1 Tbsp chopped Italian parsley
½ tsp salt
½ tsp ground black pepper
¼ cup (½ stick) chilled unsalted butter, diced
2 Tbsp extra-virgin olive oil
1 cup diced fresh morel mushrooms or chanterelle mushrooms (about 3 oz)
12 uncooked medium shrimp (about 5 oz), peeled, deveined
1 garlic clove, minced

Steps:

  • Whisk eggs, herbs, salt, and pepper in bowl until just blended. Stir in butter. Heat oil in heavy large skillet over high heat. Add mushrooms; sauté until beginning to brown, about 3 minutes. Add shrimp and garlic. Saute until shrimp are just opaque in center, turning occasionally, about 2 minutes. Pour egg mixture over. Cook until butter melts and eggs are just set but still creamy, stirring often, about 1½ minutes. Spoon onto platter.
