Steps:
- Beat egg. Place ham and salt in a large pot and cover with water. Bring to a boil. Reduce heat and simmer until ham is tender (about 2 hours). Place schnitz in a large bowl, cover with water, and soak for 2-3 hours. When ham is tender, add apples along with soaking liquid. Add brown sugar and onions, and bring to a boil. Reduce heat and simmer (covered) for 1.5 hours. Sift together flour, baking powder, salt, and pepper. Add the egg and butter (melted). Add enough milk to make a moist, stiff batter. Bring ham and apples to a boil and drop in the batter by tablespoonfuls. Simmer 12-15 mintues. Season with salt and peppe to taste. SERVING: Transfer the ham to a large platter and let it stand for 5 minutes. Carve thinly and spoon dumplings, etc. around meat.
