Steps:
- Spray a nonstick sauté pan with vegetable spray and heat on high. Add scallops and sauté for 1 minute or until slightly brown on each side. Remove scallops and set aside. Spray pan and add garlic, onion, and lemon zest, and sauté over low heat until soft. Raise heat to high and add spinach and wine. Add seasoning, broth, and lemon juice. Add scallops and simmer for 1 minute to heat through. Serve over cooked rice.
