~ Savory Basmati Saffron Rice ~ Cassies image

One of my favorite rices. I made a spiced shrimp, that I ladled over top. So, so good! This rice could be served as a side with any meat. Yum!

Number Of Ingredients 8

1 cup(s) basmati rice
handful - mixed vegetables, frozen
2 cup(s) chicken broth
1/2 - 1 teaspoon(s) chicken buillon
1 tablespoon(s) dried, minced onion
1/2 teaspoon(s) salt
1 tablespoon(s) butter
couple pinch(es) saffron - crumbled

Steps:

  • Rinse the Basmati rice and drain. In a medium saucepan, add all ingredients and stir. Bring to a boil then turn heat to simmer. Place a lid over pan and simmer for 15 minutes. If liquid is not absorbed, simmer a bit longer.
  • Fluff with fork and serve immediately. Delicious!
