Sauerkraut soup with pork ribs image

Number Of Ingredients 9

1 kilogram Smoked pork chop (ready to cook)
300 grams waxy potatoes
300 grams carrots
1 onion
600 grams Sauerkraut (canned)
2 bay leaves
3 peppercorns
1 tablespoon Caraway
freshly ground peppers

Steps:

  • Rinse ribs and place into a pot with 1.2 liters (approximately 5 cups) of water. Bring to a boil, skim off any foam and simmer for about 1-1 1/2 hours on medium heat.
  • Peel potatoes, carrots and onion. Cut potatoes and carrots into bite-sized pieces and chop onion into small cubes.
  • Drain sauerkraut.
  • Remove ribs from broth, set aside and cool. Loosen meat from the bones and cut into small pieces.
  • Heat butter in a saucepan and saute onion until translucent. Add potatoes, carrots and sauerkraut and saute briefly. Add meat stock and spices and simmer for about 25 minutes on medium heat.
  • Add meat and season with pepper. Pour into bowls and serve.
