SAUERKRAUT SALAD image

My Momma used to make this several years back. We fell in love with it, since we make our own kraut & grow all the other veggies, except celery. There is no kraut taste in it. We've made it ever since then. If you don't like kraut, give this a try. There is no kraut taste in it.

Number Of Ingredients 12

2 1/2 cup(s) *kraut, drain slightly
1 small jar pimentos
1 - green bell pepper
1 bunch(es) green onions (4 or 5)
3 - celery (ribs)
- *i used 3 pints of homemade, by the time i drained the juice.
DRESSING
1 teaspoon(s) celery seeds
1 cup(s) sugar
1/2 cup(s) water
2/3 cup(s) vinegar
1/3 cup(s) canola oil

Steps:

  • DRAIN KRAUT. MIX IN WITH CHOPPED ONION, CHOPPED CELERY, CHOPPED PEPPER, & PIMENTOS & SET ASIDE.
  • MIX DRESSING INGREDIENTS IN SAUCEPAN & BRING JUST TO A BOIL, SO SUGAR IS DISSOLVED. POUR OVER FIRST MIXTURE WHILE STILL HOT IS FINE, & REFRIGERATE OVERNIGHT. WILL KEEP ALMOST INDEFINATELY.
  • GOES WELL WITH ALMOST ANYTHING.
