Sauerkraut Mushroom Soup with Pasta image

So tasty with the savory and sour flavors.

Number Of Ingredients 10

1 medium onion chopped
2 tablespoon(s) olive oil
pinch of salt and sugar
6 clove(s) garlic minced
8 cup(s) chicken broth
1 tablespoon(s) better than bouillon roasted chicken bouillon
3 cup(s) baby bella mushrooms sliced
15 ounce(s) jar of sauerkraut with juice
1 cup(s) ditalini or any small pasta of choice
salt and pepper to taste

Steps:

  • Add oil to large pot. Add the onion and a pinch of salt and sugar. Reduce heat and cook until the onion is browned. Add the garlic and cook 30 seconds. Add the chicken stock, bouillon, mushrooms and sauerkraut with the juice. Bring to a boil. Cover and reduce heat to low. Simmer 1 hour
  • Add the pasta and simmer 15 more minutes. Taste and adjust for salt and pepper
