A great sauce or condiment to serve with prime rib, or just a good steak. I serve this with pork and even lamb as well. I prefer to use fresh grated horseradish, but you can also use prepared if you don't have access to fresh or if you just want to skip that step. It is very easy, but a great side.

- Sauce #1 -- Mix the sour cream, fresh grated horseradish, shallot, worcestershire, lemon juice, dijon, salt and pepper. Chill for at least 1 hour. Serve.
- Sauce #2 -- Because the prepared horseradish sauce already has some lemon and other ingredients for flavoring, I skip the worcestershire sauce, but you could always add some if you want. I also cut down the lemon as well, but I do use some for the freshness it offers.
- Mix the sour cream, prepared horseradish sauce, shallot, lemon juice, dijon, salt and pepper. Chill for at least 1 hour. Serve.
- Options -- I enjoy the mustard in mine, give it a try; you will not be disappointed. Also, I always start with a small amount of lemon to start and you can always add more. This way you can taste as you go.
- Serve -- With any of your favorite meats; prime rib, steak, lamb, pork, or even over baked salmon. ENJOY !
