1 1/2 cups shortening
2 cups sugar
4 eggs
1 teaspoon cinnamon
1 teaspoon allspice
1/2 cup pecans
2 cups flour
1 1/2 teaspoons baking soda
3 cups grated carrots

Steps:

  • Cream the shortening and sugar together.
  • Add eggs then dry ingredients.
  • Stir in pecans and carrots.
  • Place in a greased 9x13 inch pan.
  • Bake at 350 degrees for 1 hour.
  • When cool frost with a cream cheese frosting.
