Santa Fe Chicken image

This recipe uses a method of cooking I call "steam-fry". It is cooked in the marinade so the chicken is infused with flavor. Healthy too!

Number Of Ingredients 11

1/2 c chicken broth
1/4 c fresh lime juice
1 Tbsp sugar
1 Tbsp chili powder
1 Tbsp vegetable oil
1 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
2 tsp dijon mustard
1 lb chicken breast halves, skinned and boned (4-4 ounce breast halves)
1 tsp fresh cilantro, chopped

Steps:

  • 1. Combine the first 9 ingredients in a shallow dish or storage bag; add the chicken. Cover and marinate in the refrigerator up to 30 minutes.
  • 2. Place the chicken and marinade in a large nonstick skillet; bring the marinade to a boil.
  • 3. Reduce heat and simmer, uncovered, foro 5 to 6 minutes or until the chicken is done. Sprinkle with chopped ciilantro.
