Salty Cracker Pie image

This pie has it's beginnings in the depression. It has remained a Southern Comfort food for some. Now, the taste is back as sweet and salty are a popular combo. Ritz had a similar pie that was to mock apple pie. This is not a mock pie. It did replace pecan pie for many.

20 saltine crackers, crushed
1 lb dates, chopped
1 c sugar
2 c pecans, chopped
1 tsp baking powder
4 egg whites, room temperature
1 tsp vanilla

Steps:

  • 1. Preheat oven to 350. Combine cracker crumbs, dates, sugar, pecans, and baking powder and set aside. Beat egg whites until stiff but not until dry and add vanilla. Gently fold dry ingredients into egg whites and pour into a buttered 9 inch pie pan. Bake at 350 for 30 minutes. Cool and serve with whipped cream.
