Salted Caramel Strawberries image

Found this one in a back issue of Southern Living then looked it up on Southern Living's website. It got the best of ratings and reviews. Hope it lives up to its standards. I would imagine this perfect for afternoon tea, brunch or shower.

Time 20m

Yield 20 strawberries, 6 serving(s)

Number Of Ingredients 6

20 large fresh strawberries
40 caramels
3 tablespoons whipping cream
1/4 teaspoon salt
1 1/4 cups coarsely chopped mixed nuts
wax paper

Steps:

  • To prepare strawberries do not remove green caps before washing. Water will seep into the berry, softening the texture and weakening the flavor. Wash strawberries just before using then patting dry with paper towels. (Caramel mixture will not stick to wet strawberries.).
  • Microwave caramels, 3 tablespoons whipping cream and 1/4 teaspoon salt in a 1-quart microwave-safe bowl at MEDIUM (50% power) for 3 1/2 minutes or until smooth, stirring at 1-minute intervals.
  • Dip each strawberry halfway into caramel mixture. Roll in nuts and place on lightly greased wax paper. Let stand for 15 minutes. Serve immediately or cover and chill up to 8 hours.
