Salsa Rice with Chicken and Black Beans image

It could not be faster or easier and it's very inexpensive. We took our salsa rice recipe and just added to it and the result is very tasty. Number Of Ingredients 11

1 c water
1-1/2 c chunky salsa
1 c uncooked instant rice
1 chicken breast - cooked and shredded
1/2 can(s) 15 oz can of black beans - drained and rinsed (save the other half of the can for later)
tortilla chips
flour tortilla - store bought or made from scratch
additional salsa if desired
snipped chives for garnish
sour cream for garnish
black olive slices for garnish

Steps:

  • 1. In a saucepan, bring water and salsa to a boil. Stir in rice, chicken and black beans then remove from the heat. Cover and let stand for 5 minutes then stir. Re-cover and let sit for another 3 minutes.
  • 2. 3 ways to serve this : 1 - Serve hot in a bowl garnished with snipped chives and a little extra salsa if desired. 2 - Serve with tortilla chips and dip the mixture onto the chips. 3 - Spoon the mixture into a warm tortilla and eat like a burrito.
