SALMON WITH SHIITAKE RELISH image

Number Of Ingredients 12

12 oz shiitake mushrooms tops only wiped clean
olive oil
2 tbsp shallots
2 tbsp garlic
1/2 tsp each fresh parsley, sage, rosemary, thyme
1 tbsp balsamic vinegar
2 tsp fresh lemon juice
salt & pepper
2 lbs salmon fillets
olive oil
seafood rub mix from store
lemon wedges

Steps:

  • in a bowl tos mushrooms in olive oil and a dash of salt and pepper grill or broil on both sides unitl cooked thru apx 5 mins remove and slice thinly set aside heat oil in pan add shallots & garlic saute til tender add to mushrooms and add herbs toss to coat add in venegar and lemon juice set aside to get to room temp lightly brush the salmon with oil coat on both sides with seafood rub grill or briol til fish is done and flakes top with shiitake mushrooms and serve
