SALMON WITH COCONUT MILK image

2-2 1/2 lbs salmon
lemon juice 4 tbls
olive oil 2 tbls
1 onion finely chopped
minced ginger--tbls
2 c chopped fresh tomatoes
green beans
1 can unsweetened coconut milk
seasonings--basil, cilantro, salt, pepper

Steps:

  • Skin off salmon--cut into 2" pieces. Marinate in lemon juice and olive oil--1 hr + Preheat oven to 350 saute onion, add garlic, ginger, tomatoes--get saucy--then add coconut milk and green beans--season salmon in single layer--bake 10 min pour sauce over salmon--cover, bake 15 min--garnish with cilantro
