Salmon Salad I image

I made this on a whim as tuna salad works well, why not try salmon. My wife had made a spicy dish dish for her for dinner, and since she is not a fan of canned fish, or yellow curry powder, I decided to try this out. Excellent flavor from the curry powder.

Number Of Ingredients 6

1/2 can(s) salmon, drained, 15 oz / 425 g can
1/4 medium onion, diced
1/2 teaspoon(s) yellow curry powder
1/8 teaspoon(s) garlic powder
mayo, as desired, about 1-2 tablespoons
4 slice(s) bread of choice, plain or toasted and buttered

Steps:

  • I diced the onion first and gout out the seasonings before opening the salmon, as I was knew I was going to get surrounded by our cats when they smelled that. Then drained the salmon and put 1/2 of it in the dish, and broke it up a little with a fork. This is skin on and bone in salmon.
  • Add the curry powder, garlic powder, and about a heaping tablespoon of mayo.
  • Mix everything together and add additional mayo to your desired consistency. Cover and place in the fridge to chill for an hour or two.
  • Using bread of your choice, I used my homemade multigrain bread I made earlier in the day, I also toasted and buttered the bread. Add some salad to 2 slices, top with remaining 2 slices. Enjoy.
