Salmon Patties a La Jane image

This is my spin on salmon patties. Just about everyone here at JP makes them, and they are all done differently.

Number Of Ingredients 14

14 3/4 ounce(s) can pink alaskan wild salmon
1/2 cup(s) plus 2/3 cup seasoned bread crumbs, we like italian
1 large egg
1/2 cup(s) onion, chopped
4 tablespoon(s) mayonnaise
2 teaspoon(s) lemon juice
2 teaspoon(s) horseradish, creamy horseradish sauce works here too
1/4 teaspoon(s) each, kosher salt, freshly ground black pepper, and dill weed
1 teaspoon(s) hot sauce, optional
- tartar sauce:
1/2 cup(s) mayonnaise
1/3 cup(s) pickle relish, sweet
1 1/2 teaspoon(s) lemon juice
1 1/2 teaspoon(s) either hot sauce, or sue's aunt's sadie's hot pepper sauce

Steps:

  • Drain salmon and pick off the skin and the round crunchy bones. Crumble with your hands.
  • Put salmon, 1/2 cup bread crumbs, egg, onion, mayo, lemon juice, horseradish, and seasonings in a large bowl and mix well. The hot sauce is optional, but we like it.
  • Form 4 patties with your hands.
  • Put the 2/3 cup breadcrumbs on a shallow dish and roll patties in them. Cover and refrigerate for an hour.
  • Heat oil in a heavy skillet, and fry salmon patties until browned, turn and brown on the other side.
  • Make tartar sauce by mixing up all sauce ingredients, cover and chill until serving time.
