This is my spin on salmon patties. Just about everyone here at JP makes them, and they are all done differently.

Steps:
- Drain salmon and pick off the skin and the round crunchy bones. Crumble with your hands.
- Put salmon, 1/2 cup bread crumbs, egg, onion, mayo, lemon juice, horseradish, and seasonings in a large bowl and mix well. The hot sauce is optional, but we like it.
- Form 4 patties with your hands.
- Put the 2/3 cup breadcrumbs on a shallow dish and roll patties in them. Cover and refrigerate for an hour.
- Heat oil in a heavy skillet, and fry salmon patties until browned, turn and brown on the other side.
- Make tartar sauce by mixing up all sauce ingredients, cover and chill until serving time.
