SALMON LOAF .. My GRANDPA WALKERS Favorite Meal image

My maternal Grandfather, John Walker ( see picture) loved this dish. Along with creamed peas and carrots. Nothing fancy ...just gooood eating!! Simple and quick. Bless his heart, when he knew we would be visiting, down in southern Ill. He would remind me to bring a can of salmon..so's he could enjoy his favorite meal. Along with...

Number Of Ingredients 8

1 lb can (about 2 cups) salmon
1 Tbsp lemon juice
2 Tbsp butter
2 Tbsp flour
1-1/2 c milk
1/2 tsp salt
2 eggs, beaten
1 c oats, old fashioned

Steps:

  • 1. Drain, bone, and flake the salmon and sprinkle with lemon juice, set aside. Melt butter in a saucepan. Add flour and stir until smooth. Add milk all at once, stirring constantly, until thickened. Season with salt. Combine sauce with salmon , beaten eggs, and rolled oats.
  • 2. Bake in a 8-1/2 x 4-1/2 well greased loaf pan in a moderate 350 degree oven until done. About 30 minutes.
