SALAD WITH HERB VINAGRETTE image

Number Of Ingredients 17

8 cups mixed greens (baby spinach, arugala, spring mix, romaine lettuce, etc)
2 kirby cucumbers sliced
1 pint cherry or grape tomatoes
1 cup slivered snow pea pods
1 cup slivered carrots
1 cup chopped walnuts
Dressing
2 oz wine vinegar
2 oz white vinegar
3 tablespoons balsamic vinegar
1 tablespoon yellow mustard
1 medium garlic clove minced
2 tablespoons fresh herbs of your choice, minced (oregano, marjoram,basil,rosemary,sage,
mint, etc)
1 teaspoon freshly ground black pepper
2 teaspoons kosher salt
6 oz Extra virgin olive oil

Steps:

  • place first 6 ingredients in a large bowl. Wisk the next 8 ingredients in a bowl. slowly pour in the olive oil wisking the entire time. Pour enough dressing over salad to coat all ingredients and serve immediately.
