Salad of Tart Greens with Prosciutto and Warm Balsamic Dressing image

Number Of Ingredients 15

1 Red onion (medium) sliced into thin rings
1/2 cup Red wine vinegar
1 Small head each romaine, radicchio, red leaf lettuce and curly endive
1/2 cup Pine nuts, toasted
4 Scallions, thinly sliced on diagonal
3 ounces Italian Reggiano Parmesan cheese, saved into curls
3 ounces Prosciutto di Parma, thinly sliced, cut into bite sized pieces
1 cup Basil leaves, lightly packed
1 cup Italian Parsley leaves, lightly packed
8 cloves Garlic, cut into 1/4" dice
2/3 cup Extra Virgin Olive Oil
4 1/2 tablespoons Balsamic Vinegar
3 tablespoons Red Wine Vinegar
1 tablespoon Dark Brown Sugar
1/2 teaspoon Salt and fresh ground pepper

Steps:

  • Salad can be assembled several hours ahead. Cover with plastic wrap and refrigerate.
  • Serve slightly chilled.
  • Dressing can be cooked several hours ahead. Cover and set aside at room temperature
  • Reheat dressing and toss just before serving.
